  • Slice peeled potatoes.
  • Chop onion.
  • Heat oil to medium high.
  • Add potatoes to hot oil and saute about 3 minutes. Add onions and saute about 3 minutes.
  • Add green chili and cover.
  • Turn burner to simmer and simmer about 20 minutes, or until done.

  1. Perfect accompaniment to a Tex-Mex meal. From PanNan's suggestion, I cut the oil to 1/4 cup which seemed to be about right.
     
  2. Yummy. We loved the taste of chilies with the potatoes, and it was a nice change for plain fried potatoes. I added some salt and pepper for our taste, and the only thing I will do different next time is cut the oil back to about 1/4 cup.
