- 1⁄2 cup red capsicum (finely chopped)
- 1⁄2 cup yellow capsicum (finely chopped)
- 1⁄2 cup green capsicum (finely chopped)
- 1⁄2 onion (finely chopped)
- 1 teaspoon cumin seed
- 2 tablespoons oil
- 1⁄2 cup basmati rice (soaked for 1 hr and drained)
- salt
- 2 teaspoons black pepper
- 2 tablespoons cottage cheese (paneer grated, for garnish)
- 2 tablespoons coriander (chopped, for garnish)
directions
- steam the rice with 1 cup of water and keep aside.
- in a pan, add oil and cumin seeds
- once it crackles, add the onions.
- when onions turn brown add all the capsicums.
- fry for a few minutes (5 to 6) for the capsicum to get cooked.
- add salt and pepper
- add the steamed rice spoon by spoon,
- mix well.
- remove from gas.
- add coriander and paneer.
- serve hot with raitha.
