- 1 cup sliced fresh mushrooms
- 1 medium onion, chopped (1/2 cup)
- 8 ounces torn fresh spinach (6 cups)
- 1 tablespoon water
- 2 (6 ounce) boneless grilled chicken breast strips
- 1 cup shredded mozzarella cheese (4 ounces)
- 1⁄4 cup grated parmesan cheese
- 1⁄4 cup bottled caesar salad dressing
- 4 pita bread rounds, split
directions
- Coat a large skillet with nonstick spray. Add mushrooms and onion. Cook over medium heat 5 minutes. Remove from heat. Add spinach and the 1 tablespoon water to skillet. Cover; cook 1 minute until spinach just wilts.
- Stir in the cooked chicken and heat through. Add cheeses and salad dressing; toss. Serve with pitas.
