  1. Preheat oven to 350 degrees and line 12 cup muffin tray with liners.
  2. Mix together: cashew meal, baking soda, spices, and shredded coconut.
  3. In a separate bowl,mix together: eggs,coconut oil, honey, fresh ginger, and carrots.
  4. Mix together wet/dry ingredients.
  5. Scoop into muffin liners and cook for about 20 minutes or until toothpick comes out clean.
  6. Enjoy!
