Triple Onion Chicken

- 2 bacon, slices
- 2 cups sliced white mushrooms
- 3 leeks, well rinsed, trimmed, and cut in julienne strips (white part only)
- 1 medium yellow onion, chopped
- 1⁄2 cup light sour cream
- 1⁄2 cup half-and-half cream
- 1⁄4 cup shredded cheddar cheese
- 1 (1 ounce) package onion and mushroom soup mix
- 1⁄2 teaspoon paprika
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 4 chicken breasts, halves, skinless, boneless (1 to 1 1/2 pounds)
directions
- Heat a large skillet over medium heat. Cook bacon until crisp. Remove and drain. Discard all but 2 tablespoon fat.
- Add mushrooms, leeks and onion to pan. Cook 8 minutes, stirring frequently. Remove from heat and cool slightly.
- Add sour cream, half-and-half, cheese, soup mix, paprika, salt and pepper.
- Coat a 13 x 9-inch glass baking dish with cooking spray. Arrange chicken in pan.
- Pour cooled mushroom mixture evenly over chicken. Crumble bacon over top. Cover with plastic wrap; refrigerate overnight.
- Preheat oven to 350°F Remove plastic wrap and bake, uncovered, 1 hour.

<p>I was born and raised in Connecticut. I love the New England area, I think it is so pretty with the change of the seasons. <br /><br />I work for an ambulance company in their wheelchair division for non-emergency transportation. I work in the billing and customer service office. I love my job, the duties are so varied that you are always working on something different....no time for boredom. <br /><br />I am a mother to four, two sons and two daughters. <br />All have left the roost to start there own family. At last count, I was a granny to 6 boys and 2 little girls. <br /><br />I love Recipezaar and all the new daily postings. I see so much I want to try and continue to save them. I just don't have all the time to make all these recipes. I lost my husband in July 2006 and I am not the spring chicken anymore...pretty tired when I get home from work...so it's all quick, quick, quick, for me. <br /><br />I have tried a few....and have been pleased with my results and the new taste sensations. I am trying to initiate a goal of trying at least two new recipes a week.
