Tropical Chicken and Rice

- 3 - 4 1⁄2 lbs chicken pieces
- 1 1⁄2 teaspoons salt, divided
- 3⁄4 teaspoon pepper, divided
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 (14 ounce) can chicken broth
- 1 (14 ounce) can coconut milk
- 3⁄4 cup unsweetened pineapple juice
- 2 cups rice, uncooked
- 1⁄4 teaspoon dry crushed red pepper
- 4 green onions, chopped
- 1 (3 1/2 ounce) jar macadamia nuts, toasted and chopped
directions
- Sprinkle chicken evenly with 1 tsp salt and 1/2 tsp pepper.
- Brown chicken in hot oil in a large skillet over medium high heat 8-10 minutes on each side. Remove chicken from skillet, reserving 1 tablespoon of drippings in skillet.
- Add butter to skillet, stirring to loosen particles from bottom. Add onion and saute about 4 minutes; add rice and saute 4 minutes; add garlic and saute 1 minute more. Stir in chicken broth, coconut milk, and pineapple juice. Return chicken to skillet and sprinkle with remaining salt and pepper. Bring to a boil, cover, reduce heat, and simmer 35 minutes or till rice is tender.
- Uncover, fluff rice with a fork, and let stand 5 minutes before serving. Sprinkle evenly with green onions and nuts. Garnish with fresh pineapple, if desired.

Wow this was very yummy. I wasn't sure about the pineapple juice or coconut milk in this recipe of how it would turn out. I'm very glad I gave it a shot. There were 0 complaints from hubby. Which means this should have more stars than it does. He's not big on chicken but when he ate this, he LOVED it! The only thing I didn't add was the nuts because I didn't have any. But next time I'll remember to pick some up. Also I added more crushed red peper than called for, next time I'll stick to the amount listed (it had a kick!).Thanks for this Tropical hit!

MMmm the rice was so good and flavorful. I halved the recipe for the 2 of us and used 1 cup of rice. The store was out of macadamia nuts so I used toasted walnuts which gave it a nice crunch. Next time I will reduce the amount of time I saute the breasts from 8 min. to 5 on each side as the chicken was on the dry side. This was a nice take on chicken and rice!

Just made this for dinner tonight and I have to admit that I made a couple of changes to suit what I had on hand. I used wild rice, not white, mandarin oranges, not pineapple and green onions, not regular. In spite of the changes my hubby and I thorough enjoyed every bite! He wanted to know when I would make this again! Lovely recipe and the red pepper flakes added a nice kick. Thanks Jeri for a great keeper!

I was born and raised for the most part in Georgia. Since 1997 I've lived in the beautiful mountains of western NC, where I spend way too much time at work and not nearly enough time camping! I have a partner of 15 years (Lee) and 3 kids--2 grown and 1 teenager still at home. Camping is one of my favorite things to do. Other favorite ways to spend my time are doing beadwork, knitting, and making homemade soap. I should also admit that I spend waaaay too much time on the internet, but the bright side of that is that it brought me to Zaar! I spend a ridiculous amount of time here, but I love every minute of it. It's also has helped cure me of my pathological cookbook buying. I used to call cookbooks with full-page glossy photos my food porn. ;-) Now, thanks to all the talented photographers here, I can get all the food porn I want!
I love to read recipes, which most of my friends think is just weird. I suspect, though, that a lot of you don't think it's weird at all! I love to cook, but only when I want to. I also love to entertain and wish I had time to do more of it. I love trying new recipes. I was a vegetarian (vegan, actually) for several years, and that's when I got hooked on trying so many different cuisines. I still love vegetarian foods, but I do eat some meat, fish, and dairy/eggs now. I still try to keep it healthy and eat as little processed food as possible, but I'm not totally strict about it. Sometimes I want some good old junk food--I just try to make it home-made junk, so at least I know what's in it!
My pet peeve is willful ignorance. Grrrr
