  • 2 tablespoons orange juice
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons olive oil
  • 14 teaspoon table salt
  • 14 teaspoon black pepper, freshly ground
  • 4 cups mixed baby greens
  • 5 ounces cooked chicken breasts, skinless boneless
  • 34 cup pineapple chunk, fresh, cut into chunks
  • 1 mango, fresh, cut into chunks
  • 12 cucumber, seedless, cut into chunks
  • 14 cup mint leaf, fresh, cut into thin strips
  • 14 cup red onion, thinly sliced

Directions

  1. In a large bowl, stir together orange juice, vinegar, oil, salt and pepper until blended.
  2. Add salad greens, chicken, pineapple, mango, cucumber, mint and onion; toss to mix and coat. Serve immediately. Yields about 3 cups per serving.
