ingredients
- 1 cup milk
- 3⁄4 cup whipping cream
- 1 cup granulated sugar
- 3⁄4 cup freshly squeezed lime juice
- grated lime zest
directions
- Stir the milk, cream, and sugar together until the sugar is mostly dissolved.
- Add the lime zest and juice and stir to mix. (It does not curdle.).
- Freeze, as directed, in an ice cream machine.

Oh, my ... this was absolutely delightful. I actually own this cookbook, and don't know how I missed this recipe, so thanks for bringing it to my attention! I had a bunch of limes to use up (the perils of shopping at Costco), and this was a fabulous way to use 'em. I used half-and-half and light cream, rather than milk and whipping cream, just 'cause I had them on hand. I think you could use any variety from skim milk (using cornstarch as a binder) to cream, and it'd turn out wonderfully. Thanks for posting this! (Oh, it took about 5 minutes to put together, and made 6-8 servings.)
