Tropical Turkey & Spinach Salad

"I originally had this salad while I attended a Pampered Chef party. This was a very pretty salad, and it had lots of flavor; especially the home-made salad dressing. My family loves this salad!! Prep time in making this salad is questionable."

  • Dressing Ingredients

  • 6 tablespoons apricot preserves
  • 4 tablespoons cider vinegar
  • 4 teaspoons vegetable oil
  • 4 tablespoons sugar
  • 12 teaspoon salt
  • 14 teaspoon black pepper
  • Salad Ingredients

  • 8 ounces smoked turkey, deli-meat torn into bite size pieces
  • 12 cup diced red bell pepper
  • 1 mango, cut into 1/2-inch to 3/4-inch cubes (about 1 cup)
  • 3 hard boiled egg whites, coarsley chopped (discard the yolks)
  • 14 cup chopped red onion
  • 6 ounces fresh spinach
  • Garnish

  • sliced almonds, add desired amount

  • For dressing - In a jar with a tight fitting lid, shake all the dressing ingredients together until blended. Cover, and chill the dressing in the refrigerate until ready to use.
  • For salad - In a large bowl, add the salad ingredients, then add to individual salad bowls. Shake dressing vigorusly; pour desired amount of dressing over the salad bowls; tossing gently to coat.
  • Sprinkle sliced almonds over the salad, if desired, and serve immediately.
  • Serves: 4 (adult size servings).
  • Note: Peaches and nectarines can be substituted for the mango.
