Tuna Fish Salad on a Bed of Lettuce

- 6 lettuce leaves
- 1 (6 ounce) can tuna packed in oil
- 1 large celery rib, chopped
- 1⁄3 cup green pepper, chopped
- 1⁄4 cup green onion, chopped
- 3 tablespoons mayonnaise (your favourite brand will do)
- 1 pinch salt and pepper
- 1 teaspoon oregano
- 1⁄4 cup olive, chopped
- 1 tomatoes
directions
- Put the pepper, celery and green onion in a blender or food processor, and grate finely.
- Add the Tuna fish and mayonnaise, and pulse twice.
- Add the seasonings and pulse two more times.
- Line the lettuce leaves on a medium sliced plate, and spoon the tuna fish mixture in the center.
- Cut the tomatoes into round slices and put it around the tuna fish. Sprinkle the chopped olives on the tomatoes.
- Conversely, you could makes this into a sandwich, using torn lettuce leaves. Leave out the tomatoes and the olives if desired. Makes for a filling mini-meal and for good leftovers.

This was good. I was surprised by the nice flavour of the oregano and black olives in this. I made the mixture into little wraps of cos lettuce leaves chopping each ingredient small. But I left out the green pepper as a preference and used canned black olives for the olives. I would make these again trying a toothpick to keep them together and maybe add a squeeze of lemon.

This is a very nice Tuna Salad Recipe. I added the green onions with the tuna instead of with the celery so they did not disappear in the mix. I did have to pulse the tuna more then twice to get it chopped up but no big deal. I did it gently as possible. I omitted the salt since the olives were briney. The proportions were spot on. Thank you Student Chef for the lovely lunch!

I am an Israeli-Canadian who grew up in Montreal Quebec. I love to cook, especially for family and friends, and I love to experiment with recipes and try to do different variations of the same recipe. I did do part of cooking school, but found the place stressful and all the good recipes high in fat and calories, even the good ones. I don't have a fave cookbook, but I eat kosher. I have a dream and that is to own my own B&B one of these days. I also love creative writing, and maybe I like to try make up a recipe of my own and see if I'm good at doing that.
I have to add that I do have some favourite chefs from the Food Network. They are Giada De Laurentis from Everyday Italian; Micheal Smith from Chef at Home; Jamie Oliver and everything he does; Anna Olson from Sugar; and Chef Gordon Ramsey from Hells' Kitchen and Ramsey's Kitchen Nightmares.
