Ingredients: 2 tablespoons olive oil; 1 small onion, chopped; 4 garlic cloves, minced; 1/2 teaspoon dried Italian seasoning; 1/4 teaspoon hot pepper flakes; 10 ounces frozen spinach, thawed, squeezed dry and chopped; 28 ounces stewed tomatoes; 1/4 cup oil-cured olives, pitted and chopped; 2 tablespoons capers, rinsed and drained; 15 ounces tuna, drained and broken into chunks; 12 ounces spaghetti; parmesan cheese, grated (optional)

2 tablespoons olive oil
1 small onion, chopped
4 garlic cloves, minced
¹⁄₂ teaspoon dried Italian seasoning
¹⁄₄ teaspoon hot pepper flakes
10 ounces frozen spinach, thawed, squeezed dry and chopped
28 ounces stewed tomatoes
¹⁄₄ cup oil-cured olives, pitted and chopped
2 tablespoons capers, rinsed and drained
15 ounces tuna, drained and broken into chunks
12 ounces spaghetti
parmesan cheese, grated (optional)

directions

In a large skillet, heat the oil over medium heat.
Cook the onion, garlic, Italian seasoning and hot pepper flakes for 5 minutes or until softened.
Add the spinach and tomatoes, breaking up the tomatoes with the back of a spoon.
Add the olives and capers and bring to a boil.
Reduce the heat and simmer for about 10 minutes or until thickened.
Stir in the tuna.
Meanwhile, in a large pot of boiling salted water, cook the pasta for 8 to 10 minutes or until tender but firm.
Drain and return to the pot.
Add the sauce and toss to coat.
Serve sprinkled with cheese (if using).
