  • Heat to boiling 1 cup water and 1/2 cup b utter.
  • Stir in 1 cup flour and 1/4 teaspoon salt.
  • Stir all together until mixture leaves pan and forms a ball (about 1 minute).
  • Take off heat and cool, beat in 4 eggs, one at a time.
  • Beat mixture until smooth and glossy.
  • Drop by spoonfuls on ungreased cookie sheet {1/2 teaspoon batter 2 inches apart).
  • Bake in 450°F oven 15-20 minutes.
  • Cool and split in halves.
  • Fill with tuna fish salad.
  • Makes 50-75 puffs.

  1. These are wonderful little appetizers and very addicting. The tuna salad filling I used was chopped celery, chopped red onion, chopped dill pickles, mayo and tuna. A couple of tricks if you have not made these before: 1. Use a wooden spoon for stirring. 2. After you cut the puffs in half, you'll find they are semi hollow and you may want to remove a little of the center so it holds more tuna salad.

I live in the southern suburbs of Chicago, in a small, quaint town. I love to try new and great sounding recipes. I collect cook books having just donated about 3oo to the local Human Society 2nd chance Resale Shop. I also love being by the water and fishing in summer, which I don;t get enough time to do. I am not working anymore but spend many days looking and reading and collecting recipes.Playing with grandkids is a favorite passion for me also.We have a small dog adopted from the Humane society , she is abt. 8yrs. old ,have had her about 1 1/2 yrs now, she is the best lil girl anyone could have ,she is an absolute delight to have around.
