- 1 1⁄2 tablespoons lemon juice, freshly squeezed
- 1 garlic clove, chopped
- 2 tablespoons extra virgin olive oil
- 2 (15 ounce) cans cannellini beans, drained and rinsed
- 1 (6 1/2 ounce) can tuna in water, drained and flaked
- 1⁄3 cup sun-dried tomato, sliced into thin strips
- 1⁄4 cup red onion, minced
- 2 tablespoons fresh parsley, chopped
directions
- In a medium bowl, blend lemon juice, garlic, salt and pepper.
- Gradually whisk in olive oil.
- Add the beans, tuna, tomatoes, onion and parsley.
- Cover and chill.
