  • For the pasta: In a large pot, bring 3 quarts of water and 1 tablespoon salt to a full boil. Add pastas and cook for about 10 minutes until al dente. Immediately strain pasta and cool by running cold water over pasta in strainer. Drain pasta completely and place in a bowl. Coat pasta with canola oil to prevent sticking.
  • For the dressing: Place tuna in a large bowl and break down into small pieces. Add the remaining dressing ingredients and thoroughly whisk to combine.
  • Combine the dressing and cooked pasta and mix thoroughly. ALLOW SALAD TO MARINATE FOR 8 HOURS! After 8 hours, top with more pickle juice and salt and pepper to taste.

  1. Made this for my niece who just had surgery and a not great diagnosis. She requested it specifically and it’s never been my thing at Sweet Tomatoes. I followed the directions except fur only using 1 cup of pickle juice. This recipe made a huge amount, I gave my niece half and kept the rest for my husband and I. It is delicious and we cannot stop eating it. I didn’t even think I liked this dish and typically cannot stand dressing with mayo, but I love the flavors in this and the different textures with the pastas- although I’ll probably leave out the fettuccine next time. Thank you so much for posting this recipe, you made my niece super happy and we all appreciate it!

  2. I grew up going to souplantation, it was my absolute favorite restaurant/buffet to go to. The Tuna Tarragon was my favorite dish of all time and unfornately when sweet tomatoes had to close down I was heart broken. This recipe tastes exactly like our beloved tuna tarragon from souplantation, it truly brought back memories of my childhood. The serving size of this recipe is perfect for family gatherings of 10-15 people.

  4. For those who feel it may be too sweet pickley or not enough tarragon--it may depend on the brands of pickles used and also on how fresh your dried tarragon is...Something to think about so you can adjust the amounts and the ingredients you personally use.
