Turkey and Cheese Chimichangas (Ww)

"We had these last night with recipe#246807 for a wonderful simple supper. If following the WW flex plan these are 5 points each. I used medium-hot salsa (Garcia's kitchen) for the turkey mixture and topped with hot salsa (Los Cuates). Recipe source: WW web site."

  • Preheat oven to 350-degrees F.
  • Spray a skillet with Pam.
  • Spray 13x9-inch baking pan with Pam.
  • Over medium-high heat cook turkey for 5 minutes or until browned.
  • Drain and then add next 5 ingredients (beans - scallios). Cook until heated through (3-5 minutes) and then stir in cheese. Take off of heat.
  • Meanwhile wrap tortillas in foil and warm in oven for 10 minutes.
  • To assmble chimichnagas spoon 1/2 cup of turkey mixture onto each tortilla and fold up sides and roll up burrito style.
  • Place chimichangas, seam side down in prepared baking pan.
  • Bake uncovered for 20 minutes or until tortillas are crisp and brown.
  • Serve each topped with 2 tablespoons of salsa and 1 tablespoon of sour cream.

  1. Really great! Tons of flavor, and leftovers were terrific. These are more burritos than chimichangas though. I also froze a few for future emergency lunches. If freezing, thaw in fridge overnight before microwaving. I did use full-fat cheese because I don't like the texture of low-fat.
     
  2. This was really good! My family liked it, too. I served it with FF refried beans on the side, chips and salad. The leftovers were great heated up for lunch. Thank you!
     
  3. This was awesome!! I made a few changes...but not big ones. I used leftover shredded turkey breast,vegetarian refried beans and like MamaJ I reduced the salsa to 1 cup. They were perfect and my family couldn't even tell that it was a WW meal. I used medium salsa in the filling and jalapeno salsa on top. I will be making these again...very easy!   4. Delicious, quick and easy....what's not to like?! I followed this recipe to the letter and loved the result. The only thing I might change about it is to add only 1 cup of salsa to start and then add the rest based on the consistency of the filling. I found the filling just a bit runny, but delicious none the less. I lightly sprayed the chimichangas with olive oil spray to help them crisp in the oven. This is a great week night meal that doesn't taste like diet food. Thanks for posting ellie!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
