Turkey Casserole

"This is my favorite turkey casserole. Chicken can be substituted. Great for left over Thanksgiving or Christmas turkey. I found this recipe many years ago in a newspaper. My sons especially liked the cheese topping so I used to double the topping ingredients. Whether I serve it at home or bring out, I always get compliments and often asked for the recipe."

  • Melt butter over low heat, add green pepper, celery, onion. Saute until tender, but not brown. Blend in flour and seasonings. Stir in milk and broth and cook until thick and smooth, stirring constantly. Fold in turkey and pimento, if using, and allow to heat through. Place cooked rice in bottom of a 2 quart casserole. Pour over turkey mixture. Mix crumbs, melted butter, and cheese and sprinkle over top.
  • Bake in 350F oven for 30 minute or until lightly browned. Makes 6 servings.

  1. Great. Only sub was Ritz crumbs for the topping, which was nice. Complimented with hot sauce for extra zest!
     
  2. Would add broccoli next time. Easy to make and I had everything on hand. I replaced the pimento with black olives. The hot sauce idea was good. Yum.
     
  3. This is a great recipe. I took Paul A.'s advice and used Ritz crackers just for a change. French fried onions would be really good as well. Make it to your liking. I added peas to make it the quintessential Chicken, Rice and Peas casserole from back in the day.
     
  4. My family loved, loved this! My husband didn't even know there was rice in it. :) I only had a small portion but really liked it. They all said how creamy and tasty it was. Enjoyed it so much that I made two. I didn't change a thing but did omit the pimentos only because I didn't have any or any roasted red peppers which would have been awesome as a substitute I think. Oh I did make one change - for the milk - I don't have whole milk in the house but have skim and cereal cream so I mixed them and it was great. The second time I used can milk and some cream as I was out of milk all together and it was even more luxurious.
     
  5. I will use 1 cup of rice next go around. Very good flavor.
