- 1 1⁄2 lbs ground turkey
- 2 (15 ounce) cans black beans
- 2 (15 ounce) cans chopped tomatoes
- 1 large carrot, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 1⁄2 onion, diced
- 2 tablespoons olive oil
- 2 tablespoons cumin
- 1 teaspoon black pepper
- 4 tablespoons chili powder
- 2 cups beef broth
- 1 cup chicken broth
- 1⁄2 jalapeno pepper, diced
directions
- 1. Heat the olive oil in a heavy stew pot. Add the onions and saute them. When they soften and begin to turn brown, add carrot, red & green pepper. Add chicken broth as needed to keep vegetables from sticking.
- 2. In a separate skillet, brown the ground turkey. When it is cooked through, add it to the vegetables in the stew pot.
- 3. Add beef & chicken broth, the jalapeno, and the spices.
- 4. Simmer on low for several hours, until liquid reduces and flavors develop.
