Turkey Curry Croissants

"Found this in the West Hawaii Today newspaper back in Nov 2005. Sounds like it would be a nice way to use up some leftover turkey. And...you can freeze the turkey mixture until you're ready to make the sandwiches."

  • Drain and chop peaches, reserving 2 tablespoon liquid.
  • In a medium mixing bowl, combine peaches, turkey, celery and raisins.
  • In a small mixing bowl, stir together cream cheese, curry powder and reserved peach liquid until smooth.
  • Pour over turkey mixture, tossing to coat.
  • Spoon mixture into a 2-cup freezer container and freeze if desired.
  • To serve, thaw turkey mixture overnight in refrigerator.
  • Spread mixture on 4 croissant bottoms and sprinkle with peanuts, then add lettuce.
  • Put on croissant tops and serve.
