Turkey Dumpling Stew

"This recipe comes from The Taste of Home "light & Tasty" 2003 cookbook. I love it, and so does my family. Last time I made it I only got one bowl! The best part is that's it's healthy and hearty. Enjoy!"

  • In a dutch oven or large saucepan, cook the bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 teaspoons drippings.
  • Cook turkey in the drippings until no longer pink. Add the carrots, 1 3/4 cups water, broth, onions, celery, rosemary, and bay leaf.Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until vegetables are tender.
  • Combine flour and remaining water until smooth; stir into turkey mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaf. Stir in the salt, pepper, and reserved bacon.
  • In a bowl, combine biscuit mix and milk.
  • Drop batter in six mounds onto simmering stew.
  • Cover and simmer for 15 minutes or until a toothpick inserted into dumplings comes out clean.

  1. Pretty good! My kids liked it too -- except for the celery. I would have liked it a bit thicker though -- would use a bit less water next time.

While I used cooked turkey breast it made up beautifully and think it would work great with left over turkey pieces too ... keeping the recipe handy for the holidays should we see to any left over turkey. Also made this using chicken breasts with great results. Other then using my own homemade dumplings I made as posted.The combination for ingredients comes together to make for one delicious stew. Thank you Busymom.
     
  3. I made this for supper last night and I really enjoyed it. My fiance didn't like it quite as much, but I thought that it was very tasty and relatively easy. Next time I'll make more dumplings for it I think though. Thanks for the recipe!
     
  4. Easy rccipe, good for you and great taste! It's such a comfort food with the warm dumplings and tasty broth. I usually put a strip or two extra of bacon becuase the kids love it - it's a regular during fall and winter at our house!
     
  5. I fixed this for my family the other night...I should have doubled the recipe!!! there were no left-overs for lunch the next day!! :) The flavor was fantastic! There could have been a bit more of the sauce for our liking but still a keeper! Thanks for sharing busymom!

I'm a busy SAHM to three kids. I really enjoy cooking and trying out new recipes. My sons love to help me cook as well. I'm sure once my daughter gets old enough, her hands will be in the mixing bowl too!
