Turkey Escalope With Lemon and Capers

- 2 large turkey cutlets
- 1 tablespoon seasoned flour
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 tablespoon capers, rinsed and chopped
- 2 tablespoons fresh parsley, chopped
- 25 g butter, cut into cubes
directions
- Lay a sheet of wax paper or cling film over the escalopes, or put them in a plastic bag, then pound them with a rolling pin to make them thinner.
- Sprinkle the flour over the escalopes until they are covered on both sides.
- Heat a frying pan over a medium-high heat and add the oil.
- Put the escalopes in the pan and cook for about two minutes on each side until lightly browned.
- Remove from the pan.
- Add the lemon juice, capers and parsley into the pan and let it bubble.
- Add the butter and then pour this over the escalopes.
- Serve with your favourite veggies.

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes.

Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce.
When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice.
We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
