Turkey Gravy

- 1⁄4 cup turkey fat
- 2 tablespoons flour
- turkey stock, approx. 1 cup
- heavy cream
- salt
- white pepper
- cayenne pepper
directions
- Separate fat from stock and in hot skillet add 1/4 cup fat and bring to a boil. Whisk in 2 tablespoons flour and turn flame down to low. Continue whisking until it's somewhat smooth. Turn heat up to high and slowly add turkey stock, little at a time, whisking constantly and adding enough stock until it's the consistency you want. Turn heat down to low and add heavy cream and seasonings to taste. Let simmer on low heat for few minutes to thicken and taste. Don't forget to keep gravy hot, no one likes cold gravy!
