Turkey Reuben Sandwich

"This is much lower in calories and fat than a corned beef reuben sandwich, and just as tasty!! The best thing is you don't even have to turn on the stove for a hot sandwich!! I always make this sandwich when I have leftover sauerkraut to use up."

  • Toast the rye bread.
  • Place turkey slices on top of one slice of bread and place the sauerkraut on top of the turkey.
  • Place the swiss cheese on top of the turkey and microwave for 15-20 seconds to melt the cheese a little.
  • Spread the thousand island dressing on top of the 2nd bread slice, and place that bread slice, dressing down, on top of the sandwich and enjoy.

I am a stay at home mom of two wonderful little boys, Alex and Andrew. Cooking and Baking are my two favorite hobbies, and it's a good thing because I do it a lot!! My husband can be somewhat picky so when I find a recipe that he likes, it immediately goes into my "keeper" file. I'm a big believer in cooking healthy meals that are both good for you AND delicious. Don't get me wrong, I do love a good dessert, as you can see by my chocolate marshmallow brownie recipe!!! But everyone deserves to splurge every now and then. It's just all about moderation. I also enjoy staying fit by doing aerobics and yoga.
