  • Combine rice, cantaloupe and turkey in large bowl.
  • Finely chop mint, parsley and garlic in food processor.
  • Add yogurt and blend.
  • Add to rice mixture; toss lightly.
  • Cover and chill 2 hours.
  • Serve on lettuce leaves.
  • Garnish with fresh fruit.
