Turkey Soup

  • Boil the turkey carcass in a dutch oven for a couple of hours, strain the broth into a bowl and let the rest of the carcass cool. When the carcass is cool, pick out all of the good meat, and cube the meat into small bite size pieces and set aside.
  • Return the broth to the pot. Chop the carrots, celery, and onion, and add to the broth. Add the seasonings and the cubed turkey meat.
  • Simmer for 1 ½ hours.
  • Pull the bay leaves out. 15 minutes before you eat, put 6 oz.s of flat egg noodles into the pot. When noodles are cooked, serve.

  1. This soup does make the house smell good! Very tasty and easy to prepare after all of the meat is taken off of the bones. I already had the broth cooking with the onions, carrots and celery and I needed a recipe so I would know what kind of seasoning I should use to flavor it up a bit. The only thing I did differently was add 1/2 tsp. poultry seasoning instead of the full 2 tsp. It made a large pot, enough for more the next day. Thanks, I'll make this again.

I'm 58 and disabled. I'm not real sure how disabled, since I'm quite sure I'm not useless. I worked in insurance for over 20 years, 12 as the manager, and before that I was a sailor on a nuclear submarine. I had 4 kids, two were inherited when I got married, and two more that are way too much like me. One of my inherited kids has since passed away. I like to read, play golf when I can, and I love to fish. I am generally handy and firmly believe that if I can find a book to tell me how to do something, then I can do it. I have been married to the same woman for the last 30 years, and it looks like we're stuck with each other. I'm a happy person, grateful for what I have, but generally not requiring a lot. Watching my trees grow and my flowers bloom is what I call relaxation. The only thing that makes that experience more enjoyable is to have my dog Dixie near by. I like good cigars, Arturo Fuente 8-5-8 maduro as a matter of fact. I wear a hat like Indiana Jones wears. I like to cook for my wife, but she doesn't always like it.
