Turkey Soup

"Just a way to use up some of that left over turkey or a soup that would be wonderful comfort when battling a nasty cold. You can substitute pasta for the rice but add it in when you add the peas since it requires less cooking time than wild rice."

  • Heat olive oil in large pot to medium-high heat. Add the onions, carrots and celery to pot and cook until tender.
  • Add the Italian seasoning, sage, rice blend and turkey. Stir and cook for a minute.
  • Add chicken broth and bring to a boil then turn down and simmer for 20 minutes to low heat.
  • Add peas, tomatoes and lemon juice and cook for another 10 to 20 minutes.
