- 1 1⁄2 lbs ground turkey
- 1⁄2 cup dry breadcrumbs (I use Panko)
- 3⁄4 cup shredded carrot (you can substitute zucchini for some of the carrot)
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon garlic
- 1 egg
- 24 ounces marinara sauce
- 6 whole wheat sub rolls
- 1 1⁄2 cups mozzarella cheese
directions
- Preheat oven to 400°.
- Combine ground turkey, breadcrumbs, carrots, salt, pepper, garlic, and egg in a bowl; stir well. Shape mixture into 30 (1 1/2-inch) meatballs. Place on a broiler pan coated with cooking spray. Bake at 400° for 15 minutes or until done.
- Once the meat balls are done, transfer them to a pan and heat them up with the marinara sauce. While the meatballs and sauce are heating up, toast the sub rolls in the oven for a few minutes. Once the sauce is heated and the subs are toasted, assemble the meat balls (about 4 or 5 meatballs) on one side of the sub, top with cheese, and put the other half of the sub on the meatballs.
