Ingredients: 1 medium onion, chopped; 1 tablespoon vegetable oil or 1 tablespoon butter; 3 medium-large turnips, peeled and chopped (about 3 cups); 3 large pears, peeled, cored and chopped (about 3 cups); 1 teaspoon dried thyme; 1/2 teaspoon salt; 1 1/4 cups pear juice or 1 1/4 cups apple juice; fresh ground black pepper, to taste; shredded radish; raspberries

Yields:: 4 cups

ingredients

1 medium onion, chopped
1 tablespoon vegetable oil or 1 tablespoon butter
3 medium-large turnips, peeled and chopped (about 3 cups)
3 large pears, peeled, cored and chopped (about 3 cups)
1 teaspoon dried thyme
¹⁄₂ teaspoon salt
1 ¹⁄₄ cups pear juice or 1 1/4 cups apple juice
fresh ground black pepper, to taste
Options
shredded radish
raspberries

directions

Saute onion in butter or oil, until translucent.
Add chopped turnips, apples and thyme.
Saute for 10 minutes, stirring frequently.
Add fruit juice and cook on low heat until turnips are tender.
In a blender, food processor, or using a stick blender, puree until thick and smooth. Add black pepper to taste.
Serve with optional garnishes, if desired.

I'm not rating this recipe because the Jury is still out on it. Made it exactly per recipe and it was intriguing, that's for sure! Savory yet sweet, it had a wonderful aroma to it. I grew up with Fruit Soups and this isn't one of them; I grew up with Savory Soups and this isn't one of them. I really want to make this again, but instead of the pear/apple juice for liquid, I'd like to substitute either a chicken broth or vegetable broth, to swing it far more into the Savory side. I had it with a smoked ham and Brie sandwich and had it been a bit more savory, it would have WOW'D me! After making it, I looked online for the same recipe and found it from the same Moosewood source: with identical ingredients, they have you add 2 cups of vegetable broth in addition to the pear/apple juice. With my remaining soup, I'm going to add that and see how it changes the recipe, as it was a very, very thick soup/porridge without the additional 2 cups of broth. As you can see, I've been on "Zaar quite a while now, and have reviewed quite a few recipes. Just like everyone else who's been around for a while, my rating system has undergone a change. *****Rocked my socks off. Won't change a thing! ****A good solid recipe. Enjoyed it. Might need a small change for personal preferences. ***Needs some help. Might be an operator error, but can't make it work. Someone else might think it is wonderful and give *****. So keep posting! BTW, if I forget to thank you for taking the time to prepare one of my recipes, it is unintentional! My biggest passion is my reading. I can't go to bed at night until I have read something, even if its the back of a bag of potato chips! But that ain't gonna happen.
