Ingredients Nutrition

  • 6 cups hot cooked short pasta such as fusilli or 6 cups penne
  • 4 cups baby packed spinach
  • 1 (540 ml) can six bean blend, drained and rinsed
  • 13 cup pesto sauce
  • 14 cup sun-dried tomato, blanched and thinly sliced
  • 1 teaspoon grated lemon zest
  • 1 tablespoon fresh lemon juice
  • 14 teaspoon hot pepper flakes (optional)
  • 12 cup Italian cheese blend, shredded

Directions

  1. Toss hot pasta with spinach, beans, pesto, sundried tomatoes, lemon zest, lemon juice and hot pepper flakes, (if using). Transfer to a serving bowl, and sprinkle with shredded cheese. Serve immediately.
