  1. oven 350.
  2. whisk egg yolks and 1/3 cup sugar in a large bowl.
  3. Pour cream in heavy saucepan over medium heat.
  4. Scrape seeds from vanilla bean into pot and add bean.
  5. Bring to a simmer, then remove from heat.
  6. Whisk hot cream mixture into yolks.
  7. Strain.
  8. Transfer 2 scant cups to another bowl.
  9. In the first bowl add chocolate and whisk till it melts.
  10. Pour choc custard equally into 8 2/3cup ramekins.
  11. Place in ban marie – bake 25 minutes
  12. chill 30 minutes
  13. pour vanilla over chocolate
  14. place in ban marie and bake 35 minutes
  15. chill.
  16. sprinkle sugar over tops (1 tsp each) and heat with torch until sugar melts.
  17. Chill till serving time.
