Tuxedo Soup

"This soup I made up one night with just the ingredients in my kitchen and now it has become a regular in our household. It pairs wonderfully with fresh cornbread on a cold winter night. Feel free to substitute the canned chicken for fresh or even use up your leftovers."

  • Add white beans and drained black beans into a large soup pot and turn heat to medium-high.
  • Add canned drained chicken breast and flake in pot. Can substitute leftover chicken or cook fresh.
  • Dice your onion and green pepper and add to pot.
  • Add all remaining ingredients excluding butter.
  • Stir well and bring mixture to a boil. Let boil for 15 minutes and then cover and let simmer for 30 minutes. Remove from heat and add 3 tablespoons butter and cream into soup while stirring. Serve.

  1. An easy weeknight dinner, with lots of protein. A little on the bland side, if I make it again, I'll probably more onion, and a lot more hot sauce.
     
  2. I loved this recipe. My entire family did and the kids, especially one, is very picky. I accidently drained the white beans so I had zero liquid. I added a can of chicken broth. There still wasn't enough liquid so I added another can. I sauteed the onions and peppers because I thought this might appeal to the kids better if I was lucky. It's a definate keeper!
     
  3. As written, I don't think that my husband and I would care for this soup, and it would get 3 stars. However, with some changes, we found it to be a comforting meal on a snowy night. I was puzzled that there is no liquid listed in the ingredients; odd for a soup. I first sautéed onion and pepper in a bit of the butter. Then, added chicken stock with the rinsed beans and some leftover turkey breast. I omitted the sugar and added a bit of cayenne pepper to the mix. Served up with cornbread, as suggested and enjoyed a simple meal.
