Twice Baked Faux-Tatoes

"For those avoiding potatoes, this cauliflower-based recipe is heavy on the veggies and delicious! I make mine with Country Crock, Bac-O's, fresh chives and cheddar cheese. Salt and pepper to taste."

  • Remove outer leaves from cauliflower and dice.
  • Microwave cauliflower on high for 10 minutes or until soft.
  • Place cauliflower, sour cream, and margarine in blender and pulse until smooth.
  • In oven-safe casserole dish, mix peas, bacon bits, chives, and cauliflower mixture.
  • Top with shredded cheese and bake at 400 degrees for 20 minutes or until cheese is bubbly.

Well, let's see.....I'm an RN on the children's unit at a psychiatric facility in Corpus Christi. It is difficult, but rewarding. When I have spare time, I love to spend it in the kitchen or reading books. I tend to make up recipes using whatever I happen to have on hand or centered around a particular ingredient I've got a craving for.
