  • Remove outer covering from garlic but don't separate the cloves.
  • Wrap garlic in aluminum foil coated with cooking spray.
  • Place garlic and sweet potatoes on a baking sheet.
  • Bake at 400 degrees Fahrenheit for 1-1/4 hours.
  • Separate garlic cloves; squeeze to extract 2 teaspoons pulp.
  • Slice skin away from top of each potato and scoop out the pulp leaving the shells intact.
  • Mash potato pulp with garlic, sour cream, salt and pepper.
  • Spoon into potato shells.
  • Bake 400 degrees Fahrenheit for 15 minutes or until heated.

  1. Oh, sooooooooooooo delicious!! Very simple to make . . I always substitute fresh minced garlic (the kind that comes in the jar that you keep in the fridge) for whenever whole cloves are called for. 1/2 tsp. minced = 1 clove. I will definitely make these again!
     
  2. I guess I am just use to brown sugar with my sweet potatoes, and these are definitely not sweet...not my favorite...I love garlic and I love sweet potatoes...just not together...sorry.
     
  3. Really yummy! I did the whole thing in the oven - well worth it if you've got the time up your sleeve. My finace and I both really enjoyed these - will definitely be making again.
     
  4. Excellent! I did the entire recipe in the microwave and had a meal on the table in 15 minutes. However the potato skins disintegrated so it became a puree. Tasted wonderful anyway. Thanks Helen
     
  5. This is a delicious alternative to regular potatoes. I love to cook but am often pressed for time so I cooked the potatoes in the microwave first and cooked the cloves in foil under the broiler for 15 minutes. Then I continued as directed. This only took me about 40 minutes total instead of 2 hours. Great recipe.
