Two Bean Caserole

  • In a mixing bowl combine fat free refried beans, picante sauce and 4 oz can of green chilies.
  • Dice Sweet Red Peppers.
  • Dice Sweet Orange Pepper (can use Yellow Pepper if preferred).
  • Dice Green Bell Pepper.
  • In a mixing bowl combine black beans, corn and bell peppers, sweet red and yellow or orange peppers, onion and chipotle powder.
  • Spread fat free refried bean mixture in bottom of caserole dish.
  • Seed and peel whole green chilies
  • Layer whole green chilies on top of the refried bean mixture.
  • Layer 4 oz of cheese. (Mexican cheese works best).
  • Layer black bean mix on top of cheese.
  • Bake for 1.5 hours, uncovered at 350 degrees.
  • Add the remainder of the cheese
  • Bake for 20 minutes (until cheese is golden brown).
