Two Cheese Scones With a Touch of Cayenne

ingredients
- 1 1⁄2 cups whole wheat flour (I use whole spelt flour)
- 1⁄2 tablespoon baking powder
- 1⁄8 teaspoon baking soda
- 1⁄2 teaspoon cayenne pepper (may use more if you like some heat)
- 40 g garlic infused butter
- 3 tablespoons asiago cheese, grated
- 3 tablespoons gouda cheese, grated
- 150 g yogurt (low-fat is fine)
directions
- In a big bowl combine flour, soda, baking powder and cayenne pepper.
- Rub in the butter using your finger tips.
- Stir in the two cheeses.
- Add the yogurt and knead briefly until a soft (but not sticky) dough has formed. You might need a little more yogurt (or water) to reach the right consistency.
- Flatten dough and cut out scones of desired size. I use a 3 inch glass for cutting out the scones.
- Place on a paper-lined baking sheet and brush tops with some yogurt (if desired).
- Bake in the preheated oven at 200°C/400°F for 15-20 minutes or until a toothpick inserted in the centre comes out clean.

I'm big on scones, especially this time of year, & these are absolutely delicious! I'm usually hesitant about using the full amount of cayenne listed in any recipe, but used it all this time, relying on others of your recipes being so wonderful, & we weren't disappointed! Loula, you've done it again. This recipe is a real winner. Scrumptious dinner biscuits (scones) that would pair beautifully with anything from scrambled eggs to a big roast beef. Like Karen, I used the cheese I had in the house, Havarti and Mozzarella (go ahead and laugh, it turned out to be yummy, lol). It's also a very nice dough to work with. I'm sure that these will be appearing here again. :D

I am a scone-aholic, as you know! These were AMAZING! Real scones with attitude! Loved the cayenne kick and also the use of wholemeal flour and garlic butter. I converted back to metric for the flour, and used 250g of flour. It worked perfectly. I used the cheese I had available, namely Cheshire and Cheddar with a little Parmesan, making these THREE cheese scones! I also sprinkled some cheese on top before baking. Had one whilst it was warm with fresh butter and am saving the rest to have with a salad for supper. Made for Make my Recipe in the Aus/NZ forum and KEEPERS for me Loula! FT/Karen :-)
