Two-Step Truffles

"These will be the easiest truffles you've ever made and they are sooo yummy! They are a tradition at my house for Christmas and we coat them in pink-tinted white chocolate for my daughter's birthday. You can shape them like eggs for Easter and dip them in dyed white chocolate or roll them in colored sugar. You can add different flavorings, different coatings, substitute milk, dark or white chocolate... the variations are endless. No matter how you finish these, they will taste great! The original recipe came from one of the chocolate companies several years ago but I can't remember which one."

ingredients

  • 8 ounces semisweet chocolate, chopped in small chunks
  • 12 cup heavy cream
  • cocoa
  • toasted coconut
  • cinnamon
  • finely ground nuts
  • colored crystal sugar
  • powdered sugar
  • finely ground cookie crumbs
  • fancy cookie decorating candy sprinkles (you choose the finishing items)

  • Place chopped chocolate in a bowl. Slowly bring cream to a boil in a small saucepan. Pour over chocolate. Let stand 1 minute. Stir until smooth. Cover and chill.
  • Using a melon baller, scoop into 2 teaspoon sized balls. Smooth them out a little by hand. Serve as is or roll or dip in your choice of coatings.
  • Try not to eat too many of these while you're making them or there won't be any left for the party! We have lots of fun rolling these in all different things and sampling the results as we go. The kids have a ball doing this. I usually set up 6 or 8 little bowls of things in advance. I always make a double batch that way my family can enjoy taste testing and I still have enough for the party!

  1. I've been making thses for 20 yrs. but I like to add 1/2-1 teaspoon of vanilla extract to the cream, it makes the chocolate 'POP' a bit more!

  1. Super easy and yummy desert!! I took these to a Christmas party and they made a great presentation...I rolled them in coconut, crushed oreo's, pecans and multi color sugar crystals.<br/>I used Ghiradelli semi-sweet chocolate chips and they were so smooth and creamy. I made the chocloate a day ahead...left in refrigerator overnight then rolled the trufles an hour before the party put back in fridge to set. I will make again..Thanks for posting!!!
     
  2. Wow, I never thought these would work out this great! They are very decadent and smooth with a lovely chocolate flavour (make sure to use good quality chocolate, it makes the truffles). The rolling proved a little difficult for me as I had very warm hands, but in the end it worked out nicely. But not well enough for me to attempt easter eggs, so I just made balls. lol I had so much fun rolling the truffles in all sorts of things and the finished truffles look so colourful and cute. I am very happy with this recipe and will certainly make it again! Made and reviewed for PRMR April 2010.
     
  3. Extremely easy to make with an excedingly smooth and creamy texture. Made into Easter eggs and the word that comes to mind is...CAAAAAUUUUUUUUUTTTE. Made with the grandchickadees.
     
  4. These are easy peasy truffles, and such fun to make. Very rich in flavor, and beautiful rolled in the red and green decorator sugar. You have a permanent fan in my DSIL who is the hugest chocoholic I have ever seen. Thank you for such a fantastic and fun recipe.

I'm a full-time Realtor for Century 21 Graham Realty during the day and at night I'm a wife and mother of one 6 year old daughter, Angelina plus one small dorkie dog (dachshund-yorkie mix) named Petey. I love to cook and experiment with new recipes. I've been collecting cookbooks (I have a few hundred) and recipes for as long as I can remember. I like to buy recipe boxes at yard sales and auctions and peak through them for yummy recipe gems. I've found some really amazing recipes that way. I'm a huge fan of Le Creuset enameled cast iron cookware. I've been collecting different pieces for a few years now. I always considered myself a great cook but these pans raise things to a whole new level. I'm planning to post all of my favorite recipes that I've collected over the years. I have all these clippings and pieces of paper and magazine clips that are everywhere. My recipe boxes are packed with these things and it's time to organize the whole mess. I suppose it will take years (did I say years?!?) to get them all posted but it's worth it. So keep checking back to my posts for new goodies. I can't wait to see what long lost gems turn up. I've already run across several of my old favs. Isn't it nice to have all your best recipes all organized right here? I've also been printing them out and putting them in a nice new binder where I can actually find them when I want to make them. I LOVE this site. I have found some of the best recipes EVER right here on 'Zaar. There are some fantastic cooks here and I just want to say "Thank you" to all of you who have made me look like the greatest cook on the planet with your wonderful recipes. I try to make as many new ones each week as I can. It's so much fun experimenting. My DH of 9 years is my guinea pig- he will eat ANYTHING I put in front of him. My little girl... well, she's more of a challenge to please. Not really picky but she doesn't really like meat or stuffing or peppers or mushrooms or.... oh, the new one is onions. I could go on but you get the idea. You probably have or had one just like her. They seem to learn all about these things that they don't like at school. All of the sudden...they don't like something they've been eating for 3 years because their friend "Alyssa" doesn't like it. What a challenge it is feeding these little creatures!
