  • add salt,oil,vinegar,minced garlic and anise to the yoghurt and mix till blended.
  • take the grated cucumber in your hands and squeeze out all the water and discard,you should be left with a pulp mix this pulp with the rest of the ingredients and store in the fridge.
  • serve with dolmadhes,fried zucchini,eggplants or fish.

i have always been interested in cooking from an early age especially food of the med. i worked in Italy renovating a farmhouse for a client and pulled out a couple of woodfired ovens, sadly they were not wanted.when i got home i built one in my garden,all friends and family love the food from it.
