“They aren't round and pretty. Sort of like a mix between a biscut and a muffin. The texture is more like sticky biscut dough. These aren't super sweet and I will probably adjust this soon. I use La Leche League baking mix LLL Baking Mix. I find that frozen blueberries hold their shape better.”

  1. Preheat oven to 375.
  2. Whisk together milk, egg, sugar substitute, vanilla and cinnamon.
  3. Stir in Baking mix until moist.
  4. Fold in blueberries.
  5. Fill muffin papers in muffin pan 3/4 full.
  6. Bake 18 minute.
