  1. In a mixing bowl, beat eggs.
  2. Add oil and pumpkin; beat until smooth.
  3. Combine remaining ingredients; gradually beat into pumpkin mixture.
  4. Pour into 5 (5 x 2 1/2") OR 2 (8 x 4") loaf pans.
  5. Bake the 5" pans at 325^ for 50 to 55 minutes OR 75 to 80 minutes for the 8" pans.
  6. Cool in pans 10 minutes before removing to cool on racks.
