Ingredients Nutrition

  • 8 -10 red potatoes, boiled, cubed, and chilled
  • 6 slices bacon, cooked and crumbled
  • 1 12 cups grated cheddar cheese, divided
  • 38 cup butter
  • 12 cup Hidden Valley® Original Ranch® Light Dressing or 12 cup regular Hidden Valley® Original Ranch® Dressing
  • 8 ounces Greek yogurt
  • 14 cup fresh chives
  • 2 shallots, diced
  • 1 12 cups panko breadcrumbs


  1. Mix dressing, 1 cup of the cheddar cheese, Greek yogurt, bacon, and chives. Pour this over the chilled potatoes in a large bowl. Mix thoroughly and place in a greased 9 x 13 pan. Saute diced shallots in butter until translucent and add bread crumbs. Pour this mixture evenly over the potatoes. Bake covered at 350 degrees for 40 minutes. Remove from the over and uncover. Sprinkle remaining 1/2 cup of cheese on top. Return to the oven uncovered and bake until the cheese has melted, usually 3-4 minutes.
