Ultimate Steak Marinade

"I believe that this recipe original was created by Dinosaur Barbeque. It is a recipe that was given to me in the late 1990's when I first looked at it I thought "Fish marinade maybe but steak???" but I tried it with an inexpensive cut of steak and was instantly hooked! I now buy steak in quantities when it is on special and will pour a quarter-cup or so of this marinade in the freezer bag with the steak, coat well, remove any air, seal and toss in the freezer. If not freezing your meat with the marinade, then let meat sit in 1/2 cup marinade for at least four (4) hours and preferrably overnight prior to cooking. Remove meat from marinade and gently shake off excess. Sprinkle a little seasoned salt over steaks and cook over open grill for a treat fit for a king!"

  • Mix together garlic, onion, orange juice and lime juice.
  • Heat oil in pan until just starting to smoke. Cover your hands and arms with oven mitts and use a pot lid as a shield, then carefully pour orange juice mixture into pan. It will splatter a fair bit but without this sudden heat, the marinade isn't the same. Cook for 5 minutes or until onions are tender.
  • Season with remaining ingredients, let cool for a few moments and then pour into a blender. Pulse three or four times to blend.
  • Cool and use as a marinade for meat or vegetables or it can make a wonderful salad dressing as well.
