  1. Sauté the onion, shallots and garlic in 1 Tablespoon butter until starting to caramelize.
  2. In the meantime boil potatoes until soft.
  3. Drain and mash the potatoes with a mixer or potato masher.
  4. Add the remaining 3 Tablespoons butter until melted.
  5. Add the onion mixture,.
  6. Start adding milk until the potatoes are the right consistency.
  7. Taste for salt and pepper; add the horseradish.
  8. Taste and add more butter, salt and pepper, or horseradish as needed.
