Unity Church Potato Casserole

- 2 cups shredded cheddar cheese
- 1⁄4 cup butter
- 16 ounces sour cream
- 1⁄3 cup chopped onion (or more)
- salt and pepper
- 6 medium potatoes, cooked and coarsely shredded
- 2 tablespoons butter, and corn flake crumbs for topping
directions
- Combine cheese and ¼ cup butter in pan. Stir over low heat until cheese is
- melted. Remove from heat and stir in sour cream, onion, salt and pepper.
- Add potatoes, mixing gently. Pour into buttered casserole. Melt remaining
- butter and add to crumbs. Sprinkle on top of casserole. Bake at 350º for 30
- minutes.
