Unstuffed Bell Peppers

"I developed this recipe one day when I had some green peppers with a couple of bad spots on them. I just cut out the bad parts and used them anyway. Since then this is the only way I make it anymore. I never really liked the big chunks of meat in a stuffed pepper anyhow. I am sure someone else has done this too, now some of my family makes it this way too."

  • 4 green peppers
  • 1 12 lbs ground beef
  • 1 large onion, chopped medium
  • 1 cup instant rice
  • 1 cups spaghetti sauce (meatless) or (26 ounce) jar prepared spaghetti sauce

directions

  • Slice peppers in to 1 in strips, or 1 X 1 inch squares.
  • Place in bottom of a med to large dutch oven.
  • Mix ground beef with onions and rice.
  • Break up into medium chunks and sprinkle over the green peppers.
  • Pour sauce over the top.
  • Bake covered, 350 degrees for about 1 hour.

  1. This was a great dish! I had some green peppers that were on sale but they just weren't so pretty, this casserole was perfect for them! I do recommend using a really good pasta sauce with lots of flavors because those are the only spices that will go into this, I used a sweet basil sauce from classico and it was great! Thanks for sharing this!
     
  2. What a great idea chilepepper! This turned out perfectly. I had to make some adjustments because my husband is on the Atkin's diet, so I substituted the rice with egg. Very easy to put together. I cut the peppers into small chunks and sprinkled on the ground beef. This would also be good with cheese. Thanks for a quick and delicious dinner!

<p>As of 3-31-13......I am now a working mom to a lively&nbsp;15 year old.&nbsp; Wow, I have not updated this in 5 years.&nbsp;&nbsp; We have&nbsp;moved fron Valparaiso, to Chesterton, to South Haven and are &nbsp;in Portage,IN.&nbsp; This is my husbands home town.&nbsp;I am working, though not happpily at the McDonalds in Burns Harbor.&nbsp; We still have Rocky the Brittany Spaniel.&nbsp; We have 3 cats.&nbsp;&nbsp;Nilla Kiki, who came up to the door of the restaraunt I worked at when we lived in South Haven.&nbsp; We moved to&nbsp;Portage in 2011.&nbsp; Tony, my hubby, moved to our new trailer which needed some work.&nbsp; Our daughter Allegra stayed with Grandma and I, and Kiki stayed with a friend.&nbsp; In June of 2011 we all moved into where we live now.&nbsp; In January of 2012 a Facebook friend who lived in Kentucky,&nbsp;said she had White Kittens.&nbsp; I joked if she would deliver I would take a female.&nbsp; Well on 1-15-12 she &nbsp;brought us Gracie Lynn.&nbsp; Then on July 3rd a kitten showed up at our house who is now Samson Anthony Hughes.&nbsp; My husband, the cat hater decided to keep him as his own.&nbsp; I would rather own my own restaurant than work at Micky D's, but there are bills to pay.&nbsp; Ally, as we call her wants to be a Pharmacist, and she is an honor roll student know and I can't let her down.</p>
