- 1 (12 ounce) package bacon
- 4 cups potatoes, diced
- 3 green onions, sliced thinly
- 1 cup Fontina cheese (I like Monterey Jack Cheese) or 1 cup monterey jack pepper cheese (I like Monterey Jack Cheese)
- 1 cup cheddar cheese
- 1 teaspoon mustard powder
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 3 eggs
- 1 cup milk
- olive oil, to taste
directions
- Cook the bacon on two foil wrapped baking sheets at 375 degrees F for 20-25 minutes. Allow to cool then crumble into small pieces.
- While the bacon is cooking, in a large saute pan cook the diced potatoes with a little olive oil and some salt and pepper over medium heat until golden brown.
- Spray an 8"x8" baking dish with nonstick spray or grease with shortening.
- Place potatoes in the bottom of the baking dish. Sprinkle with pepper jack and cheddar cheese. Sprinkle with green onion slices.
- In a small bowl, whisk together milk, eggs, mustard powder, salt and pepper. Pour gently over the potatoes, cheese and green onions. Sprinkle bacon over top.
- Cover with plastic wrap and refrigerate 8 hours or even overnight.
- When ready to cook, preheat oven to 350 degrees F.
- Remove plastic wrap and cover with aluminum foil. Bake until the center is set (45-50 minutes). Allow to stand 15 minutes before cutting.
