Upscale Chicken Divan Crescent Bake

"This totally yummy casserole appeals to everyone. There are subtle underlying flavors from the dijon and sherry that make it a bit more special, and it serves beautifully.   • Preheat oven to 375. Spray 9x9 pan with non-stick spray (use a 9x13 pan for a double batch, as shown in the photo).
  • Filling: combine chicken, broccoli, mayo and cheese lightly. Set aside.
  • Sauce: combine all sauce ingredients. Place ONE CUP sauce in bottom of casserole dish and set remaining sauce aside.
  • Assembly: Unwrap Crescent Rolls into 8 pieces. Place one-eighth of the filling onto the longer side of each triangle and roll up. Place rolls on top of 1 cup sauce in casserole dish, seam side down and allowing an inch between rolls so that the crescents will brown on 3 sides. ** Don't pour remaining sauce on top just yet.
  • Bake rolls at 375 degrees for 20 minutes. The tops will be slightly brown - remove from oven and pour remaining sauce on top. Sprinkle remaining 1/2 cup cheese on top.
  • Return to oven for 5 more minutes until cheese melts.

  1. This was a very tasty dish and surprisingly easy to put together. I used thawed frozen broccoli to cut down on prep time. I did have quite a bit of filling left over, and I filled the rolls almost to bursting. I made 8 rolls and I think it might have been easier to just make 4 rolls with the 4 small rectangles of crescent roll dough. That said, this was really not hard to put together. I don't think assembly took more than 10 minutes which was a lot less than I was expecting. I think next time I might not bake the rolls with the sauce though. The dough on the undersides of the rolls was uncooked due to them sitting in the sauce. I think it might be better to bake the rolls alone, heat the sauce in a small saucepan and serve the sauce at the table. Next time I will also be omitting the curry powder. I don't really like curry but I wanted to stay true to the recipe the first time. The flavor wasn't as overpowering and offensive as I had imagined it might be, but I think I would still like the sauce more if I replaced the curry powder with another seasoning. Thanks CookinDiva!
