Vakalolo - Fijian Pudding

"My Fijian girlfriend makes this for big family gatherings. This recipe has been reduced by about 1/4 to make a smaller quantity. The recipe calls for casava root but I couldn't get the system to accept casava as an ingredient."

  • Grate the casava very finely. Mix all 5 ingredients together.
  • Divide into 4 equal parts. Wrap in leaves or foil and steam for 40 minutes.
  • While the vakalolo is steaming, gently heat the coconut milk and salt together and bring to a gentle simmer. Remove from heat. Do not put a lid on the pan or the coconut milk will curdle.
  • Unwrap the vakalolo, place in a bowl and pour some of the coconut milk over the top.

  1. I think that it didn't accept it cause it might be spelled cassava instead of casava.Just saying,not trying to be rude.
