Directions

  1. Preheat oven to 375 degrees.
  2. Grease muffin cups or line with paper muffin liners.
  3. Mix together wheat bran and milk; let stand for 10 minutes.
  4. Beat together applesause, egg, sugar and vanilla and add to buttermilk/bran mixture.
  5. Sift together flour, flax, baking soda, cinnamon, and salt.
  6. Stir flour mixture into buttermilk mixture, until just blended.
  7. Fold in raisins and coconut spoon batter into prepared muffin tins.
  8. Bake for 30 to 40 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool and enjoy!
