  1. Preheat oven to 350 °F.
  2. In large bowl, beat sugar, butter and sour cream with electric mixer, until smooth.
  3. Stir in eggs, one at a time, and vanilla.
  4. Gradually beat in flour and baking powder with electric mixer on low speed. Add cashews and mix well.
  5. Pour into buttered 13- x 9-inch cake pan.
  6. Bake for about 25 minutes or until toothpick inserted in centre comes out clean.
  7. Remove from oven and set aside.
  8. Spread cake with Amaretto Icing.
  9. Cut into squares.
  10. Serve warm or cold.
  11. AMARRETTO ICING:
  12. In bowl, combine icing sugar, cream and Amaretto, mixing with fork.
  13. Add a little more liquid if needed, until preferred consistency.
  14. Mix well until smooth and creamy.
  15. Reserve.
