Vanilla Pudding (reduced Fat)

"I like this recipe because it doesn't include any butter and still has a delicious rich taste. It is also easy since it is made on top of the stove. I modified the instructions after the first review to make them more clear. It is important to stir the pudding the whole time it is cooking."

 1. This was so easy and turned out so well! I used unsweetened almond milk instead of regular milk, so I didn't know if it would work but it turned out great! Nice and sweet too! I would probably only use half the sugar next time. Can't wait to make it again!

 2. so easy! followed the recipe exactly and it came out perfect. used for banana pudding and it came out way better than when i made it with boxed pudding.
*update* I made with fat free milk and it came out just as good.

 3. I used fat free milk and it turned out pretty good. I'm sure it would be much better with some richer milk!

 4. I had a craving for vanilla pudding but didn't want all the fat and calories, so I'm glad I found this recipe. I reduced the calories even further by using egg substitute and Splenda. I took the advice of another reviewer and microwaved the pudding on high, stirring every couple of minutes until the mixture thickened. I made a pie using a graham cracker crust and layering the pudding with sliced bananas. This will be made again and again--thanks for posting!

 5. I'm sorry to say I found this a little too thick and a little too sweet, I would cut down on both the cornstarch and the sugar a little to compensate.

My interest in cooking focuses on making healthy dishes that are more satisfying than the higher fat and higher sugar versions. If I had a month off with no responsibilities, I would spend it at a luxury spa.
