Vanilla-Scented Fruit Salad

- 1 cup agave nectar
- 1 vanilla bean, split and scraped
- 1 lemon, juice and zest of
- 2 cups diced cantaloupe
- 1 1⁄2 cups diced pineapple
- 1 1⁄2 cups sliced strawberries
- 1 (6 ounce) container raspberries
- 1 (5 5/8 ounce) container blackberries
- 2 peaches, cored and diced
- 1 cup blueberries
- 1 cup red grapes
- 1⁄4 cup mint leaf
directions
- In a small saucepan over low heat, heat agave nectar and vanilla bean very slowly until hot and vanilla is aromatic. Cool completely, then remove vanilla bean and stir in lemon juice and zest.
- In a large bowl, combine all the fruit. Chiffonade mint leaves and add to fruit along with 1/2 cup agave syrup. Stir to combine, cover and refrigerate for at least 1 hour before serving.

Although hardly your traditional southern girl, I come from a huge southern family and have been cooking since I was eight years old.
